EATING ABOUT 1200-1500 CALORIES A DAY, SOME DAYS LESS I CAME DOWN FROM 310 LBS THIS WAY BUT I CAN HARDLY TRAIN BECAUSE I WAS FEELING WEAK

bro, thats 6 lbs of food in your stomach. u really didnt gain 6 lbs overall. if u weighed ur self that same day that u ate all that food and u been on a low carb/calorie diet, then all that food u ate just stayed in your stomach and the scale picked up the 6 lbs of food.
