what are your current goals? and where did you ever hear that guideline of not to eat carbs 6 hours before bed. Im cutting right now, and If I train later in the day Ill eat carbs after a workout, being a couple-few hours before bed. its all about timing.
also, perhaps your not eating enough during the day, the reasoning for your body telling you it needs food at nite(ravenous appetite). fiberous veggies, lean protein and healthy fats an really fill you up!

You could do a shake with micellar casein in it with some flax seed oil

Cottage cheese would be best suited cause its a slow digesting protien... That way your body will get a steady amount of protien even while your sleeping.. ANABOLIC!

Are you training in the evening? If so, you totally need to eat carbs after you train. I'm not sure where you heard not to eat carbs 6hrs before bed. Are you using any whey protein shakes? Those are quick and easy to have any time. I like cottage cheese as well before bed. I always take some sort of EFA with it as well.(usually flax oil)
