Try Grape Seed oil. High smoke point (means you can get the oil really hot, so you need less of it). When used for chuncks of chicken or beef in a wok, you get a really nice searing to the meat, then you can lower the heat. Just remember to stir often!
It's supposed to also help against free radicals.

I always stick to olive oil. But it smokes at low temperatures so you must time when you put it in.

ok, thx ! i use grape seed oil now ! i just thought that there was difference healthwise in the different oils, someone once told me that one oil was the most healthy, but i cant remember what oil it was !

Does heating the oil up aty too high a temp ever cause any structural/functional damage to the oil?

I use olive oil, I read that heating up flax or hemp oil will fuck with the efas.
