I don't know how you can eat all that rice!
I don't like rice! Anyway, the diet does look good. Add a tablespoon of flax/udo's oil in to your diet three times a day. The Udo's Oil is 15g of fat(good fat!) per tablespoon. So that gives you an extra 135 calories for each tablespoon of oil. The natty peanut butter is also a good way to add some fat in there as well. You could also snack on some almonds. I just find the oil to be an easy way to get all the fats I need.
