i usually do it once then sterilize and it looks ok. any scientific reasoning behind doing it twice?

I've done it once and I've done it twice...I would only double filter if it still looked looked like it needed more filtering, like something got through because you put too much pressure on the filter.
But there really is no need to do it twice.
